Ingredients: (serves 2)
Carte D’Or Vanilla Light
200ml pint hot strong coffee
Vanilla extract
Maple syrup (optional)

Preparation

  1. Make about 200ml (1/3 pint) of hot, strong coffee using freshly ground coffee - using a filter, cafetiere, percolator or espresso machine. Add a few drops of vanilla extract.
  2. Now put 2­3 generous scoops of Carte D’Or Light into two large coffee cups or small bowls.
  3. Pour over the coffee and, if you like, drizzle with maple syrup. Eat at once before the Carte D’Or melts!

Ingredients: (serves 4)
Carte D’Or Vanilla Light
3 clementines
Seedless red or green grapes
Fresh strawberries
1 pomegranate
A glug of Cointreau or Calvados
2 sponge fingers
Cape gooseberries for garnishing

Preparation

  1. Make up the fresh fruit concoction with the clementines, a handful of grapes, a few sliced fresh strawberries and the scooped­out seeds from the pomegranate. Add a generous glug of Cointreau or Calvados.
  2. When ready to serve, break up the sponge fingers into each serving glass, then spoon the fruit on top, reserving a few pomegranate seeds.
  3. Place 2 scoops of Carte D’Or Vanilla Light onto each portion, then decorate with the reserved pomegranate seeds and a couple of cape gooseberries.

You can make a non­alcoholic version with a slosh of apple or grape juice instead of the liqueur.

Never eaten a cape gooseberry before? You'll also see them labelled as physalis, and they are bright orange berries encased in pretty papery leaves that give them a very decorative effect. Look out for them in the exotic fruit section at your local supermarket.
