BRANDY, FIG AND ALMOND PARFAIT

This is an alcoholic and indulgent dessert for adults.
  • INGREDIENTS
  • 8 scoops of Carte D’Or Vanilla Ice Cream (200g/400ml)
  • 50g dried figs, chopped
  • 25ml brandy
  • 25g flaked almonds, toasted
  • 100ml whipping cream, whipped
  • 1 tbsp flaked almonds, toasted
  • METHOD
  • MIX

    the chopped figs and brandy in a small saucepan. Bring to the boil then remove from the heat and allow to cool.

  • MIX

    the figs and brandy into the Carte D’Or Vanilla Ice Cream

  • FOLD

    in the flaked almonds and whipped cream.

  • POUR

    into a 1kg loaf tin and freeze for 8 hours.

  • SERVE

    remove from the tin, cut into slices.

  • DECORATE

    with the toasted flaked almonds.
