APPLE COMPOTE CRÈME BRÛLÉE

A special dessert to impress your guests with.
  • INGREDIENTS

  • 8 scoops of Carte D’Or Vanilla Ice Cream (112g/200ml)
  • 2 dessert apples
  • 1 cooking apples
  • 115g granulated sugar
  • 3 tbsp cold water
  • 25g light brown sugar
  • 1 tbsp water
  • 1 vanilla pod
  • Sprinkle of cinnamon
  • METHOD

  • PRE-HEAT

    the oven to 80°C/60°C fan assisted/ Gas Mark ½.

  • PLACE

    the granulated sugar into a small pan with the water, bring to the boil and boil for 2 minutes. Allow to cool.

  • LINE

    a baking sheet with baking parchment.

  • SLICE

    one dessert apple into 12 thin slices and dip into the sugar syrup. Place them on the baking sheet and dry in the oven for approximately 5 hours.

  • PEEL

    dice and core the cooking apple and the remaining dessert apple.

  • PLACE

    into a pan with the light brown sugar, water and vanilla pod. Cover and allow to simmer for 15 minutes to make the compote. Remove vanilla pod before serving.

  • COOL

    the apple chips and set aside until dry.

  • PLACE

    3 apple chips slightly over lapping onto each dessert plate, top with a spoonful of the apple compote.

  • SCOOP

    the Carte D'Or Vanilla Ice Cream and place next to the apple chips. Serve sprinkled with cinnamon.
